Chicken with Broccoli

Chicken and Broccoli is an excellent go-to lunch or dinner option. it’s superhealthy, full of vitamin C. You could add ordinary to this healtthy meal rice, or serve it over noodles if you’d like, or even enjoy it on its own!

Makes 4 servings

 

Ingredients:

• 1/3 cup extra-virgin olive oil

• 2 tsp or turmeric broken into halves

• 4 boneless, skinless lean chicken breasts or thighs

• 2 garlic cloves, sliced

• 1 head of broccoli washed and chopped

• 8 oz. box whole wheat fettuccine

• 2/3 cup water

 

 

Directions:

Preheat oven to 400 and prepare baking sheet

In a small bowl mix together, olive oil, garlic and turmeric; pound chicken breast to ½ – 1 inch thick; brush with oil mixture; bake 30-40 minutes or until no longer pink and running juices; meanwhile, in rice add to chamber noodles and water; add broccoli to steamer; cook for 1 cycle Eating Raw or Undercooked Chicken Is Hazardous To Your Health, Cook To 165⁰
