Make easily a healthy and fresh Greek salad. It’s great to serve with grilled fish, or with grilled meats at a barbecue.
Makes 2 servings
Ingredients:
• 1 head romaine lettuce
• 2 Campari tomatoes chopped
• 1 sweet potatoes diced
• 1/3 cup Kalamata olives halved and pitted
• 1 cucumber sliced
• 1 cup feta cheese crumbled
• 1 cup fresh herbs diced (oregano, parsley, basil, rosemary)
Directions:
In bowl mix together lettuce, tomatoes, sweet potatoes, olives, cucumbers, feta cheese, fresh herbs. keep covered in refrigerator until used.
